Oat Waffles (in an Electric Waffle Iron)

Oatmeal waffles are a hearty, tasty, and healthy breakfast. They differ from ordinary wheat ones in their structure (denser and softer, not so airy). Oatmeal waffles go well with honey or jam. Served hot or warm.

Ingredients

  • Kefir, fat content 1.5% or 2% – 230 g
  • Egg (C1 or C0) – 1 pc.
  • Butter – 30 g
  • Oatmeal flakes (rolled oats), large – 74 g
  • Wheat flour, premium, sifted – 51 g
  • White sugar – 23 g
  • Baking powder – 0.5 teaspoon
  • Sea salt, fine – 0.5 teaspoon.
  • Soda – 0.25 teaspoon
  • Vegetable oil – for lubricating the waffle iron

Directions

  1. Microwave the butter and melt (I usually set it for 30 seconds).
  2. Place a skillet over medium heat and heat (3-5 minutes). Add coarse oatmeal. Stirring constantly, fry until light nutty smell (small frying pan – 4 minutes, large pan – 3 minutes). Stir especially often at the end of frying, as the flakes may burn. Oatmeal prepared in this way will give less stickiness to the dough and give the waffles a special taste.
  3. Let the oatmeal cool for 5 minutes and add to the chopper. Grind to the state of whole wheat flour interspersed. (I usually keep the cereal in the chopper for 2.5 minutes.)
  4. Combine flour, chopped oatmeal, sugar, baking powder, baking soda, and salt in a small bowl. Stir with a whisk (45 seconds).
  5. Whisk together egg and melted butter in a separate mixing bowl (30 seconds).
  6. Add cold kefir to the egg and butter mixture.
    A couple of nuances about kefir.
    This recipe requires low-fat kefir with a certain fluidity, but not water. Standard kefir 3.5% is also not suitable, too thick. Kefir has the necessary properties 1.5-2%

  7. Add dry ingredients to liquid ingredients in one go, stir (20 seconds). Let the dough sit for 5 minutes.
  8. Turn on the waffle iron and let it warm up properly, 5 minutes will be enough.
  9. When the dough is “ripe”, open the lid of the waffle iron and sprinkle with oil spray (or brush with a thin layer of vegetable oil with a brush) the top and bottom “waffle” surfaces.
  10. Spoon the dough into the sections of the waffle iron, according to the instructions of your machine. Do not layout a lot, otherwise, it will not bake or will “float” strongly (excess dough will “climb” from the waffle iron onto the table).
  11. Pay attention to par. At the beginning of baking, the steam will tumble down in a column, but by the end, after 2 minutes, it will noticeably decrease. How much to fry depends on your machine. I usually keep 2 min. 30 sec. If baking all four waffles, or 1 min. 30 sec. If I bake two.
  12. Remove waffles in one piece, then divide into portions. Cut off excess. Do not cover. Continue baking the oatmeal waffle in the electric waffle iron, sprinkling the oil on the surface of the waffle iron each time. (I do not recommend storing the dough until the next morning, the waffles will turn out raw inside.)
  13. Oatmeal waffles are served hot with honey or strawberry/peach jam. Wafers go well with cereals, fresh fruits, nuts.
