Okroshka on Broth, with Sausage and Chicken Fillet

Refreshing tasty okroshka – what else is needed in the summer heat! According to this recipe, we have been making okroshka in our family for many years. Okroshka in broth with homemade mayonnaise turns out to be nutritious and very tasty.
Ingredients
Chicken breast – 0.5 pcs.
Boiled sausage – 250-300 g
Boiled potatoes – 5 pcs.
Boiled eggs – 5-6 pcs.
Cucumbers – 2 pcs.
Green onions – 1 bunch
Fresh dill – 1 bunch
Water – 2.5 l
For homemade mayonnaise:
Egg – 1 pc.
Vegetable oil – 120-150 ml
Mustard – 1 teaspoon
Lemon juice – 1 tbsp
Salt – 1/3 teaspoon
Sugar – ½ teaspoon
Directions
Boil the chicken breast in water for 30-40 minutes, salt the broth to taste. Put the cooled broth in the refrigerator for 3 hours. During this time, all the fat particles will solidify.
Strain the broth through a sieve with 2 layers of gauze. (I got 2.5 liters of broth.)
Boiled potatoes, boiled eggs, sausage, and cucumbers cut into cubes.
Chop the dill.
Chop green onions finely.
For dressing okroshka, I will use homemade mayonnaise. To do this, 1 egg (you must first wash it well), send mustard, lemon juice, salt, and sugar to a jar or container with a small dia and high walls. Pour 120-150 ml of vegetable oil. Cover the yolk with a blender and beat until a thick white emulsion is obtained.
Pour some broth into the mayonnaise and mix with a blender to make the mayonnaise thinner.
Pour okroshka with broth with mayonnaise and mix. Let okroshka brew for 4 hours in the refrigerator.
