Ingredients

  • 6 egg (s), organic
  • 1 medium onion (s), white, peeled, diced
  • 100 g ham, back, cooked, diced
  • 80 g salami, cut into strips to taste
  • 1 tomato (s), cut into cubes
  • 60 g mushrooms, fresh, sliced
  • 1 clove garlic, finely diced
  • 3 slices cheese, (toast cheese)
  • salt
  • Pepper, colored, from the mill
  • 1 small chilli pepper (s), red, pitted, fine strips
  • 0.5 ½ bell pepper (s), green, diced
  • 1 tablespoon butter
  • 1 tablespoon oil, (sunflower oil)
  • 2 tablespoon chives

Instructions

  1. Peel the onion and cut into cubes. Peel the garlic and cut it into fine cubes (you can also press it through the garlic press). Cut the tomato into cubes.
  2. Cut the mushrooms into slices, they should be fresh! I think this is a product where you can tell extremely whether these come from the can / glass or are fresh. Of course, you can also fall back on them in an emergency.
  3. Dice the ham and cut the salami (I like to use a hearty one) into strips. Halve the chilli pepper, remove the core and cut into the finest strips. At the end of the preparation, dice the pepper (half a pod is enough here).
  4. Let a heavy pan get hot, add butter and oil.
  5. Break open the eggs and place in a tall, narrow container and whisk with a fork until these bubbles start to beat. Then season with salt and pepper.
  6. Add the onions, chilli and garlic to the pan and sauté. In fact, I prefer these to get a light tan. Here, too, I think there is even more flavor.
  7. Then add the remaining ingredients, except for the tomato, and let it simmer for about 3-4 minutes. Then everything out in a bowl.
  8. Now whisk the eggs again briefly and then add them to the pan at only medium heat. As soon as these are slightly brown at the bottom, I turn them, add all the ingredients again, including the tomato, and distribute them evenly. Immediately put the toast cheese on top. and then I immediately fold the omelette in half. Turn after approx. 1-2 minutes. If necessary turn again after 1 minute.
  9. Serve hot on top and immediately served hot.
  10. If you like it spicier, you can add some chilli flakes (dried) if necessary.
  11. A fresh farmer`s bread or pretzels with butter go well with it. In Bavaria you can have a wheat beer for a later breakfast!
  12. Many people may be surprised at the large quantities, but I would like an omelette with a lot and not, as in many hotels, with 4-5 pieces of tomatoes, 6 cubes of ham ..
