Instructions

  1. Put the flour, quark, salt, sugar and roasted onions in the food processor. Heat the buttermilk, dissolve the yeast in it and put it in the food processor. Let everything knead on the highest level for 3 minutes. Take the dough out of the bowl, knead it on a lightly floured work surface and shape into a loaf.
  2. The oven was preheated to 200 degrees top / bottom heat. Dust the inside of the baking dish with the lid with flour, place the loaf in the dish. Brush the loaf with a lukewarm, damp hand. Then scratch a cross with a ceramic knife. Then cover with the cheese cut into strips.
  3. Put the lid on and bake for 70 minutes. Do not remove the cover beforehand! I always use a glass casserole dish for this. Then I can watch how the bread is made.
  4. After the baking time, place the bread on a wire rack, cover with a tea towel and allow to cool.
  5. Spread butter on a slice of bread, with a glass of wine!

About Editorial Staff

The Boss Kitchen editorial staff oversees content review, fact-checking, and recipe verification across the site. Published articles pass through the editorial team before going live, ensuring ingredient lists, techniques, cooking times, and nutritional claims hold up in a home kitchen. The team coordinates contributions across the site writers, handles reader corrections, and maintains consistency in measurement conventions, safety guidance, and dietary labeling. Posts under this byline typically represent team-reviewed reference material, site announcements, or editorial roundups rather than individual-author features, and they are held to the same sourcing standards as bylined recipe and product coverage.
