Ingredients

  • 500 g onion (s), red Italian.
  • 2 tablespoon olive oil
  • 1 chilli pepper (s), dried
  • 1 teaspoon sugar, brown
  • 2 teaspoons spices made from: coriander, allspice, black. Ground or ground pepper
  • 1 clove (s)
  • 2 bay leaves
  • 1 cm ginger, grated
  • 40 g raisins
  • 1 tablespoon almond (s), sliced
  • 1 tablespoon apricot jam
  • liters ⅛ white wine

Instructions

  1. Peel the onions and finely slice them. Briefly roast the dried chilli peppers in olive oil, add the onions and slowly simmer over a low heat until soft. Caramelize with the sugar, then salt and add the spices. Stir in the raisins, flaked almonds and apricot jam. When the onions are quite soft, pour in the wine little by little and let it boil down well.
