Instructions

  1. If you cook in accordance with the LCHF, it very often happens that only the egg yolk is required for recipes. Since the egg white is too good to throw away, I keep it in the refrigerator and use it with this great recipe, among other things.
  2. Dice the onion and avocado. The avocado pieces should not be cut too small. Fry the onion cubes in the olive oil until golden brown.
  3. Meanwhile add the cream, salt and pepper to the egg white and whisk. Put everything in the pan, sauté like an omelette, then stir into a scrambled egg.
  4. Take the pan off the heat and add the avocado. Finally, garnish with herbs, depending on your taste.
