- 50 g onion (s)
- 80 g avocado (s)

- If you cook in accordance with the LCHF, it very often happens that only the egg yolk is required for recipes. Since the egg white is too good to throw away, I keep it in the refrigerator and use it with this great recipe, among other things.
- Dice the onion and avocado. The avocado pieces should not be cut too small. Fry the onion cubes in the olive oil until golden brown.
- Meanwhile add the cream, salt and pepper to the egg white and whisk. Put everything in the pan, sauté like an omelette, then stir into a scrambled egg.
- Take the pan off the heat and add the avocado. Finally, garnish with herbs, depending on your taste.
