Ingredients

For the dough:

  • 500g flour
  • 1 cube yeast
  • 250 ml water, lukewarm
  • 0.5 teaspoon ½ sugar
  • 1 teaspoon salt
  • 80 g butter
  • 1 egg yolk

For covering:

  • 1 ¼ kg onion (s)
  • 200 g bacon (smoked bacon)

For the cast:

  • 1 cup sour cream
  • 1 cup sour cream
  • 5 egg (s)
  • salt and pepper
  • Nutmeg and caraway seeds

Instructions

  1. Put the flour in a bowl and make a well in the middle. Dissolve the yeast in some of the lukewarm water and add to the hollow with the sugar. Cover the liquid with a little flour and cover and let rise in a warm place for 15 minutes.
  2. In the meantime, cut the onions into rings or cubes and dice the bacon. Briefly mix the pre-dough with the rest of the water, flour, egg yolk and salt. Melt the butter, let it cool and mix it with the batter. Knead well until you get a smooth dough. Dust this with flour and let rise for 15 minutes.
  3. Slowly drain the bacon in a large saucepan, fry until crispy and remove. Steam the onions in the bacon fat until translucent. Mix in 2/3 of the bacon cubes, season with salt and pepper.
  4. Roll out the dumpling on a greased baking sheet or lined with baking paper and pull up an approx. 2 cm high rim all around. Poke many small holes in the part with a fork, cover and let rise for 10 minutes.
  5. Whisk the sour cream, sour cream and eggs together and season well. Spread the topping on the dough, pour over the top. Be careful not to overflow. Garnish with the remaining bacon cubes. Bake in the preheated oven for 45 minutes at 200 degrees.
