Orange and Vanilla Vinaigrette

Ingredients

  • 250 ml orange juice, freshly squeezed
  • 1 vanilla pod, which the pulp
  • 1 lime (s), untreated
  • 60 ml olive oil
  • salt and pepper
  • 1 pinch (s) sugar

Instructions

  1. Halve the vanilla pod lengthways and scrape out the pulp. Save the pods! Rub the peel from half of the lime. Then squeeze the lime.
  2. Reduce the orange juice with the vanilla pulp and the scraped pod halves as well as the zest and the juice of half a lime and put in the cold. Remove the vanilla pod. Please let this boiled down juice cool down completely!
  3. Let the olive oil run slowly and in a thin stream into the cold orange juice, stirring constantly with the hand blender. Season to taste with the juice of the other half of the lime as well as salt, pepper and a pinch of sugar.
  4. Marinate the salad with the finished vinaigrette.

  6. This vinaigrette tastes great with lamb`s lettuce, but also with other green salads.
