Ingredients

  • 3 egg (s)
  • 0.75 liter ¾ milk
  • 1 pinch (s) salt
  • 70 g suar
  • 150 g semolina (soft wheat)
  • liter ⅛ orange juice, freshly squeezed
  • Orange (s), for garnish

Instructions

  1. Separate eggs. Beat the egg whites until stiff.
  2. Bring the milk with salt and sugar to a boil. Sprinkle in soft wheat semolina while stirring, bring to the boil again briefly, remove the pan from the stove and let it swell briefly. Whisk the egg yolks and orange juice together and stir immediately into the semolina. Pull the egg whites loosely under the bush.
  3. Rinse the tumbler molds with cold water and fill in the semolina flammeri, allow to set.
  4. To serve, turn out the molds and garnish the semolina flambé with fresh orange slices.
