Ingredients

  • 200 bulgurs
  • 500 ml water
  • 3 tablespoon soy sauce
  • 4 tablespoon lemon juice
  • 5 tomato (s)
  • 0.5 ½ cucumber (s)
  • 3 cloves garlic
  • 2 onions)
  • 1 bunch parsley
  • 1 bunch peppermint
  • 7 tablespoon olive oil
  • salt
  • pepper
  • 5 tablespoon paprika powder (Tatli Biber)

Instructions

  1. Bring the bulgur with the water, the soy sauce and the lemon juice to the boil briefly, remove from the hob and allow to swell.
  2. In the meantime, cut the cucumber and tomatoes into small cubes. Peel the garlic and onions and cut them into very small cubes. Wash and chop the parsley and mint.
  3. In a salad bowl, mix the herbs with the oil, the Tatli Biber (available in Turkish grocery stores), the onions, the garlic, salt and pepper. Then add the bulgur and the diced tomato and cucumber and let it steep for at least 6 hours.
