Instructions

  1. Wash the potatoes carefully so that the peel can be eaten, cook and, depending on the size, halve or quarter the unpeeled. Dice the tomatoes, finely chop the spring onions, chop the parsley and mint as well. Squeeze the lemons and mix the juice with salt, pepper and oil. Mix everything with the potatoes and let it steep for about an hour.
