Oven Zucchini Appetizer with Greek Sauce

For zucchini lovers, another interesting recipe, today in the Greek style! Delicious, crispy zucchini appetizer with fresh tzatziki sauce – very appetizing! It is simple to prepare, but it turns out delicious, repeat to your health!

Ingredients

  • Zucchini – 500 g
  • Almond nuts – 5-6 pcs.
  • Hard cheese – 100 g
  • Smoked paprika – 1/2 teaspoon
  • Eggs – 2 pcs.
  • Salt
  • Ground black pepper
  • Bread crumbs – 1 teaspoon
  • Amaranth flour – 50 g

For the sauce:

  • Greek yogurt – 150 g
  • Cucumber – 1 pc.
  • Olive oil – 1 tablespoon
  • Garlic – 1 clove
  • Lemon (lime) – 1/2 pc.
  • Salt to taste
  • Ground black pepper – to taste
  • Parsley greens – 0.5 bunch

Directions

  1. Prepare products for a zucchini snack with dzaziki sauce. It is best to take young zucchini.
  2. We cut the zucchini into slices, put in a colander and sprinkle with salt. In 15-20 minutes, excess liquid will drain.
  3. While we have time, let’s get to the tzaziki sauce.
  4. Peel the cucumber and rub on a fine grater.
  5. Squeeze (without fanaticism) the grated cucumber through a non-woven napkin.
  6. Now combine the cucumber, Greek yogurt, olive oil, black pepper and salt.
  7. Finely chop the parsley. In general, it is better to take mint for this sauce, but parsley is enough for our taste.
  8. Add parsley and garlic, which has been pressed through a press. Mix everything well – the tzatziki sauce is ready. Let us brew for 20 minutes.
  9. During this time, we will prepare the zucchini breading. Grind the nuts, add pepper, salt, smoked paprika, crackers and a couple of tablespoons of amaranth flour (you can also add regular flour).
  10. When the mixture is ready, rub the cheese into it and mix well.
  11. Beat two eggs and dip the zucchini slices in them. The zucchini was washed and lightly dried on a towel.
  12. Sprinkle well with breading, it adheres perfectly to the zucchini.
  13. We spread the zucchini on prepared baking paper. We bake the zucchini in a preheated oven at 220 degrees, 20-25 minutes.
  14. The zucchini are ready, let’s give them time to cool, so they will be even tastier! The sauce can be made less thick.
  15. The inside of the zucchini is very juicy, the crust is crispy! We made a great zucchini appetizer!
