Ingredients

  • 250 g oyster mushrooms, fresh
  • 100 g flour
  • 1 egg (s)
  • 0.12 liters milk
  • Sea salt, (Fleur de Sel), at will
  • Pepper, white, to taste
  • Freshly grated nutmeg or the mace or mace in a mortar
  • 200 ml rapeseed oil, for deep-frying

Instructions

  1. Wash the oyster mushrooms and turn them in a little flour.
  2. Whisk the rest of the flour with the milk and egg. Season the dough with fleur de sel and white pepper and nutmeg and leave to soak for 15 minutes. Pull the mushrooms through the batter and fry them in portions in hot fat until golden.
