Pancake Roll with Salmon

A beautiful festive snack – a roll of pancakes with salmon – will help you to celebrate any holiday brightly and unforgettably. A pancake roll with curd cheese and salted red fish is prepared in a matter of minutes.

Ingredients

  • Thin pancakes – 3-4 pcs.
  • Salmon (or other red fish) slightly salted – 200 g
  • Curd cheese – 100 g
  • Sour cream with a fat content of 15-20% – 100 g
  • Fresh parsley – 3 sprigs

For decoration (optional):

  • Fresh parsley – 1-2 branches
  • Red caviar – 1 tbsp

Directions

  1. For this recipe, it is better to use ready-made purchased pancakes (you can, of course, bake them) – we only need 3-4 things. I baked pancakes the night before, they are perfectly stored in the refrigerator for 1-2 days.
  2. Mix curd cheese and sour cream, as well as finely chopped parsley in a deep bowl. If necessary, salt if the cheese is unsalted.
  3. Overlap the pancakes (as shown in the photo).
  4. Put the curd filling on the pancakes, distribute the back of a spoon evenly over the entire surface of the pancakes
  5. Cut the fish into thin strips and place on the surface of the pancakes with curd cheese in a continuous layer, without gaps. This will make the pancake roll thicker.
  6. Gently roll the spring roll from one side to the other.
  7. We got a tight roll with rather empty edges.
  8. Therefore, cut off the edges. Garnish the pancake roll with curd cheese and salmon with red caviar if desired.
  9. You can add parsley for contrast. Such an interesting appetizer on the table will definitely not go unnoticed.
