Ingredients

  • 230 g flour
  • 2 teaspoons baking soda
  • 3 tablespoon sugar
  • 1 teaspoon salt
  • 45 g sour cream
  • 2 large egg (s)
  • 175 ml milk
  • 1 teaspoon vanilla extract
  • 1 teaspoon lemon (s), the zest
  • 3 banana (s), (ripe)

Also:

  • Butter, for frying
  • Maple syrup

Instructions

  1. Sift the flour and mix with the baking powder, sugar and salt. Mix the sour cream with the eggs in another bowl, I always use a whisk. Then add the milk, vanilla extract and lemon zest and stir everything together. There is also the flour mixture, which is stirred in and the dough is set aside for a moment. Now you peel two bananas, cut them into slices, then cut them in half and then quarter them. Put some butter in a coated pan and heat it until small bubbles bubble. Then you add a small ladle from the dough, preferably always bake two pancakes at the same time. If the dough is a little firm on the first side, spread 1 tablespoon of the bananas on top. If you do this right at the beginning, the dough will run too much. The pancake is ready to be turned when small bubbles form on top. Then you finish baking it on the other side. Continue with the batter until it is used up. Depending on how much dough you use, it makes 10-12 pieces. Then arrange the pancakes with banana slices from a third banana and serve with maple syrup.
