Ingredients

  • 175 g cottae cheese
  • 3 large egg (s), separated
  • 55 g butter, melted
  • 1 tablespoon orange juice
  • 1 tablespoon orange peel, grated
  • 2 tablespoon sugar
  • 1 pinch (s) salt
  • 1 pinch (s) ground cinnamon
  • 75 g wheat flour (whole wheat flour)
  • Butter, for frying

Instructions

  1. I get very small-grain cottage cheese here. If you only get coarse, it is certainly advisable to process it a little smaller in a mixer beforehand.
  2. Separate the eggs, place the yolks in a bowl with the cottage cheese and stir. Melt the butter briefly in the microwave, add to the egg mixture with the orange juice, orange zest, 1-2 tablespoons sugar, salt and cinnamon and stir in. Add the flour and stir in. Beat the egg whites until stiff and fold in with a spatula.
  3. Melt some butter in a pan and add a well-heaped tablespoon of batter to the pan for each pancake. It is best to bake two at a time, about 2 - 3 minutes per side, or until small bubbles form on the top. Then the pancake is ready to be turned and baked on this side. Continue like this, brushing the pan with butter again and again until the batter is used up.
  4. A little sweetened natural yoghurt and fresh fruit also taste very good. Or whatever you like with it, the dough makes about 10 pieces.
