Pancakes with Salmon and Cucumber

An original appetizer that can be prepared both on a weekday and for a festive table – pancakes with salmon and cucumber. These thin spring rolls are especially good for their convenient roll-serving. Delicious and easy!

Ingredients

  • Milk – 500 ml
  • Eggs – 3 pcs.
  • Flour – 100 g
  • Corn starch – 80 g
  • Sugar – 20 g
  • Salt – a pinch
  • Vegetable oil – 1-2 tbsp (25 ml)

For filling:

  • Salted salmon – 300 g
  • Fresh cucumber – 250 g
  • Cream cheese – 300 g
  • Fresh dill – 5-6 branches (20 g)

Directions

  1. Sift flour and starch into a deep bowl, mix thoroughly.
  2. Combine eggs, sugar, and salt in a separate bowl. Shake with a fork or whisk until smooth.
  3. Heat milk slightly in the microwave or in a saucepan on the stove until warm. Pour half the milk (250 ml) into the egg mixture. Stir.
  4. In parts, stirring each time, add flour with starch to the egg-milk mixture. Mix thoroughly until smooth without lumps.
  5. Pour in the remaining milk and vegetable oil. Stir. The finished pancake dough turns out to be rather liquid and flows down from a spoon or whisk in a thin stream.
  6. Grease a frying pan with vegetable oil and heat over medium heat. I am using a non-stick pancake pan. Stir the dough and scoop up an incomplete ladle. Pour the dough into the skillet and quickly spread over the entire bottom in a circular motion. Fry the pancake over medium heat for about 1-2 minutes on each side, until golden brown.
  7. Prepare the rest of the pancakes in the same way. Leave the prepared pancakes to cool.
  8. Prepare the pancake filling. Cut the salmon into thin cubes. Wash, dry, and peel the cucumbers. Cut into thin cubes. Rinse the dull, dry, and chop finely with a knife.
  9. Brush about half of the pancake with a thin layer of cream cheese. Sprinkle the sliced ​​dill on the spread portion of the pancake and layout the cucumber and salmon cubes, slightly stepping back from the edge.
  10. Roll the spring roll into a tight roll.
  11. Do the same with all the pancakes.
  12. Use a sharp knife to cut each pancake roll crosswise into pieces about 3 cm long. I cut the pancake into 3 pieces.
