Instructions

  1. Mix flour + baking powder + baking soda + sugar + salt well. Stir in egg yolks + butter + buttermilk. Beat the egg whites until stiff and fold in the snow loosely.
  2. Melt about 2 tablespoons of butter in a pan and bake small, round or oval, golden-brown pancakes in it, over the heat that is not too high. To do this, add the dough to the pan in portions with a tablespoon and smooth it out a little. About 3-4 pieces fit into a pan about 24-28 cm in diameter.
  3. If necessary, add a little more butter to the pan. If necessary, degrease the finished pancakes with kitchen paper and keep warm. This can be done e.g. in the oven (at around 150-175 ° C). Instead, I like to take two deep plates, heat them up in hot water - and leave the finished pancakes waiting in between.
  4. In the meantime, wash, quarter, core and cut the apples into wedges. Braise these in about 1 tablespoon of butter.
  5. Divide the pancakes with the apples on 4 plates and serve drizzled with maple syrup.
  6. Children in particular like pancakes as a main course - then maybe prepare a little more batter. Also suitable as a dessert in smaller quantities or for more eaters.
