Panforte

Panforte – nuts with candied fruits in caramel.

Ingredients

  • Small candied orange fruits – 180 g
  • Small candied lemon – 2 tbsp
  • Almonds (roasted, chopped) – 200 g
  • Walnuts (chopped) – 90 g
  • Flour – 150 g
  • Ground coriander – 0.5 teaspoon
  • Ground nutmeg – 0.5 teaspoon.
  • Ground cloves – 0.5 teaspoon.
  • Brown sugar – 200 g
  • Honey – 125 g
  • Boiling water – 60 g
  • Ground cardamom – 3 tbsp
  • Ground cinnamon – 1 tbsp
  • Powdered sugar – 50 g

Directions

  1. Turn on the oven to preheat to 180 degrees. Cover the baking sheet with parchment.
  2. In a bowl, combine flour, all candied fruits, nuts, coriander, nutmeg, and cloves.
  3. In a saucepan, mix water, sugar, and honey put on medium heat, stir. Brush the sides of the saucepan with cold water so that the sugar does not crystallize. Cook the syrup, without interfering, to a temperature of 112 degrees.
  4. Remove the stewpan from the stove, put the nuts in it, stir. Pour the caramel into the prepared mold, smooth into a layer 1 cm thick.
  5. Prepare a spicy mixture. Mix cinnamon with cardamom, sprinkle the caramel blank with this mixture. Place in a preheated oven for 25-35 minutes and bake panforte until golden brown.
  6. Remove the finished caramel cake from the oven, let it cool on a baking sheet. Then remove from the mold, remove the parchment, cut the panforte into portions, sprinkle with powdered sugar, and serve.
