Ingredients

  • 800 g potato (s), waxy
  • salt
  • 1 red pepper (s)
  • 1 yellow pepper (s)
  • 1 green pepper (s)
  • 2 onions)
  • 1 clove garlic
  • 250 g meat loaf
  • 2 tablespoon sunflower oil
  • liter ⅛ vegetable stock, clear (instant)
  • 100 g cream
  • 1 tablespoon mustard
  • salt and pepper
  • 2 tablespoon chives, cut into rolls

Instructions

  1. Wash the potatoes carefully and cook them with the skin in salted water for 20 to 25 minutes until they are soft.
  2. In the meantime, wash, dry and quarter the peppers. Remove the stem, seeds and septum and cut the pulp into thin strips. Peel the onions and garlic, halve the onions lengthways and cut into thin wedges, finely chop the garlic. Cut the meat loaf into thin strips.
  3. Heat the oil in a pan and briefly brown the meat loaf, remove and keep warm. Fry the onions, garlic and peppers in the remaining frying fat for 5 minutes. Mix the vegetable stock with the cream and mustard, pour over the vegetables and simmer for 3 minutes. Add the fried meat loaf and season with salt and pepper.
  4. Spread the peppers on preheated plates, sprinkle with chives and serve separately with the jacket potatoes.
