Ingredients

  • 700 g parsnip (s)
  • 2 apples (Boskoop)
  • 60 g butter
  • 1 teaspoon sugar
  • 1 pinch (s) cardamom powder
  • 1 pinch (s) cinnamon powder
  • 3 tablespoon crème fraîche
  • salt
  • water

Instructions

  1. Peel parsnips and apples and cut into pieces. Cover the parsnips in a saucepan with water and cook covered for approx. 20 minutes until cooked. Drain and drain.
  2. In the meantime, steam the apple pieces in melted butter for 10 minutes, add sugar, cardamom and cinnamon and steam for another 10 minutes until soft.
  3. Puree parsnips and apples with crème fraîche in a blender. Salt to taste and serve immediately.
