Ingredients

  • 250 g pasta
  • 250 g carrot (s)
  • Salt water
  • 2 bell pepper (s)
  • 50 g olives, black, pitted
  • 2 tomato (s)
  • 1 romaine lettuce
  • 4 tablespoon lemon juice
  • 1 tablespoon balsamic vinegar
  • salt and pepper
  • 3 tablespoon olive oil
  • 30 g parmesan cheese
  • Oregano, dried

Instructions

  1. Cut the carrots into slices and cook in salted water for about 3 minutes and drain. Cook and drain the pasta according to the instructions on the packet. Collect approx. 150 ml of the cooking water.
  2. Dice peppers and tomatoes. Cut the olives into small pieces. Pick up the romaine lettuce a little. Mix everything with the carrots and pasta.
  3. Mix the lemon juice, vinegar, salt, pepper, oil, a little oregano and the pasta water and mix with the salad. Grate the parmesan over the salad.
