Ingredients

  • 400 g noodles (best fussili or spiral noodles)
  • Salt water
  • 1 packet rocket
  • 75 g pine nuts
  • 200 g spinach leaves, fresh if possible
  • 1 dash olive oil
  • 1 dash balsamic vinegar, darker
  • salt and pepper
  • 0.5 clove ½ garlic
  • 75 g parmesan cheese

Instructions

  1. Cook the pasta in salted water and let cool in a large bowl. Toast the pine nuts in olive oil in a pan. Take off the heat and now add the spinach and press the garlic over it.
  2. It is best to add a dash of oil again and set it aside. The oil will absorb the taste of the garlic, spinach and seeds and will give the salad a more intense flavor later.
  3. Add everything to the pasta in the bowl and mix. When everything has cooled completely, season with salt, pepper, balsamic vinegar and, if necessary, some oil. Finally, grate the parmesan in larger pieces, mix in and grate again for the decoration.
