  • 3 tablespoon vegetable stock or broth
  • 3 tablespoon ricotta or lean cream cheese
  • 25 g pine nuts
  • 70 g rocket
  • salt and pepper
  • Parmesan
  • 200 g pasta your choice

Instructions

  1. Cook the pasta. About two minutes before the end of the cooking time, fry the salami in a pan and then put aside. Put the white wine in the pan and bring to the boil briefly, add the stock and the ricotta and stir together.
  2. Skim the pasta from the cooking water and add it directly to the sauce in the pan. It is even good if there is still a little pasta water on the pasta. Add the rocket and pine nuts and stir briefly. Season to taste with salt and pepper, but be careful, the salami and parmesan are also spicy.
  3. Pour everything into the plates. Cut the salami into strips and pour them over the pasta along with the parmesan.
  4. You can leave out the white wine if you want.
  5. Tip: By the way, it is worth making the noodles yourself, but of course you can also use instant noodles.
