Ingredients

  • 300 g shrimp
  • 5 tablespoon olive oil
  • 4 cloves garlic, fresh, finely chopped
  • 25 g tomato paste
  • 100 ml white wine, drier
  • 150 g crème fraîche
  • 250 g pasta (e.. Farfalle)
  • salt
  • pepper
  • Parsley, fresh, chopped

Instructions

  1. Cook the pasta until al dente according to the instructions on the packet. Then drain and set aside - do not put off, otherwise the pasta will not be able to absorb the sauce!
  2. Rinse the shrimp (preferably fresh, but can also be frozen) with water after peeling.
  3. In a pan, lightly fry the finely chopped garlic in hot olive oil. Mix the white wine with tomato paste and add this mixture to the garlic. Simmer together for a good 10 minutes on a low level.
  4. Then place the shrimp in the sauce and cook in it on high for about 2 minutes. Then take out half of the shrimp and puree. Return the puree to the saucepan and cook over a medium heat together with the crème fraiche, stirring constantly, until a creamy consistency is achieved (takes about 2 minutes).
  5. Now pull the cooked pasta into the sauce, sprinkle everything with fresh parsley and serve immediately hot.
  6. Tip: If you like, you can sprinkle with fresh, grated Parmesan cheese.
  7. Serve with fresh white bread. Drink a light white wine with it in summer and a dry red wine in winter.
