Ingredients

  • 250 g pasta
  • 2 tablespoons oil
  • 1 onion (s)
  • 1 clove garlic
  • 150 g cocktail tomatoes
  • 200 g spinach, youn, finely chopped or spinach, frozen
  • 150 g oat cream cheese, plain or with herbs
  • salt and pepper
  • Nutmeg, grated
  • Pumpkin seeds, or pine nuts

Instructions

  1. Prepare the pasta according to the instructions on the packet.
  2. Chop the onion and garlic, halve the cherry tomatoes.
  3. First fry the onion and garlic in a little oil, then add the tomatoes and sauté briefly. With a small splash of water just enough to cover the bottom of the pan, deglaze and add the frozen spinach. Thaw, stirring occasionally, and bring to the boil briefly, then add the goat cream cheese to the pan and let it melt. Season with salt, pepper and nutmeg.
  4. Arrange on plates and sprinkle with roasted pine nuts or pumpkin seeds.
