Ingredients

  • 10 Saltlett`s break crackers
  • 1 small onion (s)
  • 0.5 ½ bell pepper (s), red
  • 3 medium carrot (s)
  • 2 tablespoon rapeseed oil
  • 2 cans chickpeas
  • 100 g feta cheese
  • 1 tablespoon sesame seeds
  • 0.5 ½ bunch parsley
  • salt and pepper
  • Paprika powder
  • Curry powder
  • Caraway powder
  • 0.5 ½ small cucumber (s)
  • 2 tablespoon sesame paste
  • 3 tablespoon olive oil
  • 1 squirt lemon juice
  • Pistachios

Instructions

  1. 1. For the chickpea salad, clean the onion, bell pepper and a carrot and cut into small pieces. Fry everything briefly with two tablespoons of rapeseed oil.
  2. 2. Drain and wash the chickpeas. Set aside half of the chickpeas for the hummus. Mix the remaining chickpeas with the fried vegetables. Crumble the feta over the salad and stir everything.
  3. 3. Chop the parsley and add to the salad. Add the sesame seeds and season to taste.
  4. 4. Peel the rest of the carrots. Cut the carrots and cucumber into sticks.
  5. 5. For the hummus, put chickpeas with sesame paste, olive oil, salt, pepper, paprika powder, ground caraway seeds and a squeeze of lemon juice in a blender, puree finely and season to taste. If the hummus is still a little too thick, it can be touched up with a little olive oil.
  6. 6. Put cucumber and carrot sticks as well as hummus, pistachios, break crackers and chickpea salad in the lunch box.
