Easy to prepare and incredibly tasty, this pea soup with smoked sausage is a great first-course option. Due to the peas, the soup turns out to be hearty, and the smoked sausage gives it an incredible aroma. If you have not yet cooked this version of pea soup, be sure to try it.
Ingredients
Crushed peas – 1 glass
Smoked sausage – 150 g
Potatoes – 3 pcs.
Carrots – 1 pc.
Bulb onions – 1 pc.
Vegetable oil – 4 tbsp
Bay leaf – 1 pc.
Greens (dill, parsley) – to taste
Salt to taste
Water – 2 l
Directions
We prepare the necessary ingredients according to the list for the recipe.
We wash the peas and soak for several hours, at least 4 hours.
After a while, drain the water from the peas. Transfer the peas to a saucepan and pour 2 liters of clean cold water.
We put the pot with peas on the fire, bring it to a boil. Cook for about 1 hour, until the peas are well tender.
Peel and dice the potatoes.
Add the potatoes to the pot. Cook for 5 minutes.
Peel and finely chop the onion. Peel and grate the carrots.
Preheat a frying pan with vegetable oil. Fry carrots and onions over medium heat for 2-3 minutes. Do not forget to stir periodically.
Add browned vegetables to the soup, salt. Cook for another 8-10 minutes.
Peel the sausage. Cut into strips.
Rinse the greens and chop finely.
Add sausage, bay leaf, and herbs to the pea soup. Cook the soup for another 5 minutes and turn it off.
