Ingredients
- 4 tablespoon olive oil
- 1 head radicchio (approx. 300 g)
- 500 g penne
- Salt water
- 1 onion (s)
- 2 cloves garlic
- 250 ml white wine, medium dry
- salt and pepper
- 1 peperoncini or fresh chilli pepper, possibly
- Parmesan or Grana Padano, grated

- Cook the pasta in salted water until al dente. Dice the onions and stew in the oil over a medium flame.
- When the onions are nice and soft, add the squeezed garlic (and the chilli peppers or chilli peppers) and simmer them for a short time. Then add the radicchio cut into strips and fry, stirring constantly, until the radicchio has collapsed.
- Then deglaze with white wine and let it reduce. Season to taste with salt and pepper. Mix with the finished pasta. Scatter grated Parmesan or Grana Padano on top.
