Ingredients

  • 4 tablespoon olive oil
  • 1 head radicchio (approx. 300 g)
  • 500 g penne
  • Salt water
  • 1 onion (s)
  • 2 cloves garlic
  • 250 ml white wine, medium dry
  • salt and pepper
  • 1 peperoncini or fresh chilli pepper, possibly
  • Parmesan or Grana Padano, grated

Instructions

  1. Cook the pasta in salted water until al dente. Dice the onions and stew in the oil over a medium flame.
  2. When the onions are nice and soft, add the squeezed garlic (and the chilli peppers or chilli peppers) and simmer them for a short time. Then add the radicchio cut into strips and fry, stirring constantly, until the radicchio has collapsed.
  3. Then deglaze with white wine and let it reduce. Season to taste with salt and pepper. Mix with the finished pasta. Scatter grated Parmesan or Grana Padano on top.
