Ingredients

  • 1 onion (s), diced
  • 2 cloves garlic, diced
  • 1 chilli pepper (s), cut into strips
  • 1 salsiccia, fresh, peeled and sliced
  • 0.5 ½ glass red wine
  • 600 g tomato (s), cut into pieces from the can
  • 1 pinch (s) sugar
  • 6 olives, black, sliced
  • 1 pinch (s) oregano, dried
  • 500 g penne
  • olive oil
  • Salt, preferably fleur de sel
  • Pepper, more colorful, freshly ground
  • Parmesan

Instructions

  1. Fry the salsiccia, freed from the skin and sliced, in a little olive oil and take out. Little oil as the salsiccia gives off its own fat.
  2. Now sauté the onion, garlic and chilli in the remaining frying fat until translucent. Then briefly toss the olives and deglaze with the red wine. It is essential to let it boil down for approx. 4 minutes, the alcohol must evaporate, so the dish is also suitable for children.
  3. Then add the tomatoes and a pinch of sugar (neutralizes the acidity of the tomatoes) as well as the pinch of oregano, salt and the ground pepper.
  4. The sauce must simmer for at least 20 minutes, depending on the desired consistency. Just before the end of the cooking time, add the salsiccia again and let it steep.
  5. At the same time, cook the penne al dente.
  6. Drain the pasta and immediately add to the sauce and mix. Sprinkle with the parmesan on the plate and enjoy with a glass of red wine.
