Ingredients

  • 1 kg tortellini
  • 3 tablespoon pine nuts
  • 400 g cocktail tomatoes
  • 300 g mini mozzarella
  • liter ⅛ balsamic vinegar, white
  • 3 tablespoon pesto
  • 75 ml olive oil
  • 1 bunch basil
  • 1 pinch (s) sugar
  • salt and pepper

Instructions

  1. Cook the tortellini according to the instructions and allow to cool. Roast the pine nuts in a pan without oil.
  2. Mix the pesto with the vinegar, oil, sugar, pepper and salt in a bowl.
  3. Halve the tomatoes, chop the basil and add to the sauce with the mozzarella. Then add the tortellini and pine nuts and mix everything together.
  4. Now let the salad stand for at least 30 minutes.
