Ingredients

  • 1 chicken
  • water
  • 50 g iner in one piece
  • 2 onions)
  • 1 pack rice noodles (Bhan Pho Kho)
  • 4 shiitake mushrooms or champignons
  • 100 g bean sprouts
  • 0.5 ½ bunch coriander
  • 0.5 ½ bunch coriander, Vietnamese or Thai
  • 0.5 ½ bunch coriander, longer, can be omitted
  • 1 spring onion (s)
  • 1 lime (s)
  • 1 chilli pepper (bird`s eye chilli)
  • 4 tablespoon fish sauce
  • soy sauce
  • 1 cinnamon stick (s)
  • 2 star anise
  • salt and pepper

Instructions

  1. Cover and simmer the chicken in about 3 liters of water or so that it is completely covered for about 45 minutes. Then release the meat.
  2. Cut the breast meat lengthways into strips and set aside. Use the rest of the meat for other purposes. Put the bones back in the soup.
  3. Peel and halve the onion and cut the ginger into strips. Place both in a coated pan and lightly roast without oil. Then add to the soup. Also add the star anise and cinnamon stick to the soup. Cover and let everything simmer for 1 1/2 hours.
  4. While the soup is boiling, pluck the coriander, cut the lime into eighths, cut the chilli pepper, mix with the bean sprouts and divide with the chicken breast meat in 2-3 large soup bowls or large soup plates.
  5. Briefly fry the mushrooms in a pan with a little oil (e.g. sesame oil), season with salt and also add to the soup bowls. Cook the rice noodles according to the package instructions and also add them to the soup bowls.
  6. When the soup is ready, pour it through a sieve. Cut the spring onion into small rings and add to the soup. Season the soup with 4 tablespoons of fish sauce, 1 - 2 teaspoons of salt, pepper and a little soy sauce and then pour over the ingredients in the soup bowls and let it steep for about 5 minutes.
  7. Serve with a spoon and chopsticks.
