Preheat the oven to 180 ° C top and bottom heat. Grease 1 round springform pan (approx. 16 cm) and a loaf pan (approx. 20 cm) with soft butter and line the base with baking paper.
Mix the flour, sugar, baking powder, baking soda, cinnamon and salt in a bowl. Whip the butter in a second bowl until creamy. Add the egg and stir in. Add milk and mango puree and stir in. Add the dry ingredients to the wet ingredients and stir in briefly. Divide the dough between the two prepared molds. Bake in the preheated oven on the middle rack for about 25 minutes until golden brown. Remove and allow to cool completely on a wire rack.
For the buttercream, whip the soft butter with the whisk of the hand mixer until creamy. Sieve in half of the powdered sugar and whip creamy with the hot water. Add the mango puree and the remaining powdered sugar and continue beating until a fluffy cream is formed. Add some yellow food coloring until the cream is the yellow color you want.
Assemble the cake:
Place the round cake on a suitable surface or cake plate. For the ears, cut two long pieces from the oblong cake and attach them to the round cake as ears with a little buttercream.
Brush the whole cake with buttercream and place in the fridge for 30 minutes. Then distribute the rest of the buttercream on the cake and put the cake in the refrigerator again so that the cream sets.
In the meantime, make the icing. Mix the powdered sugar with a little water to form a thick, viscous glaze. Color 1/3 of the glaze with red food coloring and color the remaining 2/3 of the glaze with black food coloring. Distribute the colored glazes in piping bags.
Take the cake out of the fridge. Draw the tips of the ears, googly eyes, a small nose and mouth with the black glaze. Put the two white sugar pearls in the eyes. Paint two red cheeks with the red glaze. The Pikachu cake is ready!
Serve the sweet motif cake straight away or store it in the refrigerator.
