Ingredients

  • 1 large pineapple
  • 250 ml pineapple juice
  • 200 ml coconut milk
  • 2 tablespoon sugar syrup
  • 30 ml sugar cane schnapps, possibly brown rum
  • 3 sheets gelatine, white
  • Chocolate shavings
  • some lemon balm leaves

Instructions

  1. Clean the pineapple and cut the flesh into pieces. Put aside. Soak gelatin sheets. Mix 200 ml pineapple juice, coconut milk, sugar cane schnapps or rum and sugar syrup, run through a hair sieve. Heat 50 ml pineapple juice and dissolve the soaked gelatin in it. Mix everything and pour into a cream siphon, close it and screw on a capsule. Leave to cool in the refrigerator for a few hours.
  2. Spread the pineapple pieces on four plates and just before serving, spray on the espuma, sprinkle on the chocolate flakes and garnish with lemon balm.
