Ingredients

  • 0.5 ½ cube yeast, fresh
  • 375 ml milk, lukewarm
  • 500 g flour, (wheat flour type 550 or 405)
  • 1 teaspoon salt
  • 3 tablespoon olive oil, extra virgin
  • sesame
  • little black cumin, (in the spice shop or market)

Instructions

  1. Dissolve the yeast in the milk, then sieve in the flour, add salt and oil and knead everything very well. Cover with a cloth and let rise in a warm place. After an hour, shape the dough into a roll and cut into ten equal pieces. Roll each of these into small balls and let rise again under a cloth for ten minutes.
  2. Preheat the oven to 250 degrees. Then roll out each of the balls in a circle on a floured work surface and pull by hand so that they are thinner on the inside than on the edge. Sprinkle with sesame seeds (and some black cumin) (I coat the flatbreads with water beforehand) and, as soon as the oven has reached temperature, gradually place them on a greased, floured (or lined with baking paper) tray on the middle rack 8-10 Bake for minutes until puffy. Good Appetite!
