Plum Charlotte

In the plum season, you need to take advantage of the moment. Today we have a charlotte with plums for tea. Aromatic, tasty, juicy.

- Wash the plums.
- Peel the plums and cut them into pieces.
- Turn on the oven.
Break eggs into a bowl.
- Add sugar and a pinch of salt.
- Beat everything well with a mixer, 5 minutes, until a stable foam. (Sugar can be added not immediately, but gradually, with whipping, on a spoon).
- Sift the flour to the surface, adding in small portions.
- Stir slowly with a wooden spoon from bottom to top until smooth.
Grease the mold with oil (you can sprinkle it with semolina or flour).
- Pour half of the dough into a mold, then add the plums.
- Pour the remaining dough over the plums. Put the form with the dough on the middle shelf in the oven preheated to 180 degrees.
- Bake the plum charlotte until tender, about 40 minutes. Do not open the oven during baking!
Cool the charlotte in the form.
- Plum Charlotte is ready.
