Instructions

  1. Core four of the plums and cut into large pieces. Put the sugar in a saucepan and caramelize until golden over medium heat. Pour the caramel with the orange juice, add the plums and vanilla sugar and cook over a mild heat until the caramel has completely dissolved, but at least 10 minutes.
  2. Finely puree the plums with the magic wand, if necessary pass the mixture through a sieve and return to the pot.
  3. Stone the remaining two plums and cut into fine pieces. Add the cinnamon and the plum pieces to the pureed sauce and bring to the boil briefly. Season to taste with additional spices or alcohol.
  4. The sauce can be combined lukewarm or cold with all kinds of desserts and sweets, e.g. with Kaiserschmarrn, pancakes or vanilla ice cream.
  5. Without the plum pieces, it also makes a good sauce.

About Editorial Staff

The Boss Kitchen editorial staff oversees content review, fact-checking, and recipe verification across the site. Published articles pass through the editorial team before going live, ensuring ingredient lists, techniques, cooking times, and nutritional claims hold up in a home kitchen. The team coordinates contributions across the site writers, handles reader corrections, and maintains consistency in measurement conventions, safety guidance, and dietary labeling. Posts under this byline typically represent team-reviewed reference material, site announcements, or editorial roundups rather than individual-author features, and they are held to the same sourcing standards as bylined recipe and product coverage.
