Ingredients

  • 750 g potato (s)
  • 3 onion (s), red
  • 6 tablespoon olive oil
  • 800 g pork fillet (s)
  • 25 cherry tomato (s)
  • 5 stalk / s thyme
  • 3 sprigs rosemary
  • 250 ml meat or vegetable broth
  • salt and pepper

Instructions

  1. Preheat the oven to 200 ° C (convection: 180 ° C).
  2. Wash, peel and thinly slice the potatoes; Cut the onions into very fine wedges.
  3. Mix the potatoes & onions with salt, pepper & 3 tablespoons of olive oil, place in a baking dish and cook in the preheated oven (2nd rack from the bottom) for about 15 minutes.
  4. In the meantime, cut the pork fillet into 4 roughly equal parts, season with salt & pepper and fry all over vigorously in the remaining olive oil. Remove the meat from the pan and add to the potato and onion mixture. Fry the cherry tomatoes with the herb sprigs and add everything to the meat and potatoes. Pour in the broth & cook everything together in the oven for another 15 minutes.
