Pork (Kebab) in Onion Marinade

Grilled pork loin on the bone (or pork kebab) marinated with onions and spices.

Ingredients

  • Pork (loin on the bone) – 350 g
  • Onions – 120 g
  • Freshly ground allspice
  • Freshly ground coriander
  • Coarse salt
  • Greens
  • For the white sauce (optional):
    Mayonnaise
    Sour cream
    Garlic
    Parsley
    Dill greens
    Coriander
    Salt
    Pepper
  • For the red sauce (optional):
    Tomato paste
    A tomato
    Red onion
    Garlic
    Suneli spice mixture
    Pepper
    Salt
    Sugar
    Greens.

Directions

  1. Put the meat in a bowl, sprinkle with freshly ground pepper, freshly ground coriander, you can add your favourite spices.
  2. Chop the onion coarsely, salt it abundantly with coarse salt, this is very important. Rub the onion thoroughly with your hands until the juice runs out, and transfer the onion to the meat. We mix everything together thoroughly. It is with this onion juice that we marinate meat. I don’t use vinegar, lemon, wine, ayran, etc. Let us stand, well, you know how much.
  3. Fry pork (kebab) in onion marinade on a wood-fired grill. Or it can be done in a grill pan, and then brought in the oven. You can fry pork (kebab) in an onion marinade in an air fryer.
  4. White sauce: mayonnaise + sour cream in a 1: 1 ratio, garlic through a press, salt, freshly ground pepper, parsley and dill, freshly ground coriander.
  5. Red sauce: tomato paste, some water, finely chopped tomato, finely chopped red onion, 1 teaspoon. mix suneli, freshly ground pepper, salt, a pinch of sugar, herbs, garlic through a press.
