Pork Meatballs with Vegetable Stew

A good tasty dish is juicy meatballs stewed in vegetables and the stew itself, in which many vegetables are very tasty combined.

Ingredients

  • For meatballs:
  • Minced pork – 500 g
  • Ground black pepper
  • Salt
  • Garlic Powder – to taste
  • Eggs – 1 pc.
  • Starch – 1 tbsp
  • Breadcrumbs
  • Vegetable oil – 2 tbsp
  • For the vegetable stew:
  • Onions – 1 pc.
  • Carrots – 1pc.
  • Celery stalks – 3 pcs.
  • Green beans, fresh or frozen – 150 g
  • Fresh or frozen spinach – 200 g
  • Bulgarian pepper, fresh or frozen – 2 pcs.
  • Boiled white beans – 1 glass
  • Salt
  • Ground black pepper
  • Sweet paprika
  • Italian dry herbs
  • Tomato sauce – 3 tbsp (can be replaced with fresh tomatoes)
  •  Vegetable oil – 3 tbsp

Directions

  1. Cut onion, carrot and celery into pieces. Fry onions with carrots in hot oil, add peppers, peeled from seeds and cut into pieces. Simmer for 5 minutes, stirring occasionally. Add celery and green beans. Simmer over low heat, stirring occasionally, for 10 minutes. Finally add spinach and cooked beans. It is good to stir everything, salt and season to taste. Simmer vegetable stew for 3 minutes and turn off heat.
  2. For meatballs, add salt, pepper, starch and an egg to the minced meat. Mix well and beat off. Form into egg-sized round meatballs. Dip meatballs in breadcrumbs. Fry pork meatballs in hot oil on all sides. Put half of the vegetable stew in a baking sheet. Spread meatballs on top. Then again the remaining stew.
  3. Place the baking sheet in an oven preheated to 180 degrees for 30 minutes. You can serve vegetable stew with pork meatballs in the same dishes that you baked.
