Ingredients

  • 500 g tomato (s), aromatic, peeled, pitted and finely chopped
  • 1 red pepper (s), cleaned and finely diced
  • 1 bell pepper (s), green, cleaned and finely diced
  • 0.5 ½ cucumber (s), peeled, pitted and finely diced
  • 3 clove (s) garlic, crushed
  • 4 tablespoon vinegar (white wine vinegar)
  • 4 tablespoon olive oil
  • 0.5 teaspoon ½ oregano, finely chopped
  • salt and pepper
  • 4 slices solid bread from the day before without crust
  • 750 ml water, (ice water)

Instructions

  1. Place tomatoes, peppers, and cucumber in a soup tureen or large bowl. Beat the garlic, vinegar, oil, oregano, salt and pepper, then stir into the tomato mixture with the bread cubes. Stir in enough ice water to make a thick soup.
  2. Chill well before serving.
