Ingredients

  • 4 tomato (s), (nicely ripe)
  • 1 garlic clove (s), up to 3 pieces according to personal taste
  • 1 small onion (s), small
  • 1 tablespoon olive oil
  • 2 cup rice
  • 2 teaspoons stock, granulated

Instructions

  1. My grandma made it that way and that`s how I like it best.
  2. Tomato rice tastes great with anything pan-fried and simply great with fried fish, e.g. plaice or sole.
  3. Peel and dice the onion and sauté in olive oil until translucent (take a large enough saucepan), peel the garlic and either finely chop or press through the press. Wash the tomatoes, remove the stems and roughly dice. Add tomatoes and garlic to the onion in the pot and sauté for 5 minutes, then add the washed rice and sauté briefly. Pour plenty of water on top (approx. 1 liter), add the stock and cook the rice normally. With this type of rice, you can stir it in between times and, if necessary, add water. It shouldn`t boil dry but should be nice and juicy.
