Instructions

  1. Pre-cook the potatoes. Do not completely cook the whole potatoes in salted water (about 10 minutes). They should still be firm enough to rub. Then let the potatoes cool down a little. (You can also boil the potatoes the day before.)
  2. Remove the stalk from the cabbage. Finely slice the cabbage, lightly salt and let it steep a little. Grate the cheese. Peel and roughly grate the potatoes.
  3. Preheat the oven to 200 ° C top / bottom heat.
  4. In a large bowl, stir together the eggs, sour cream and oil. Season everything vigorously with salt, pepper and nutmeg. Add the potatoes, cabbage and half of the grated cheese and mix everything together well.
  5. Line the oven drip pan or a baking sheet with parchment paper. Spread the potato mixture on top and smooth it out.
  6. Bake the mixture in a preheated oven at 200 ° C for 35 - 40 minutes. 5 minutes before the end of the baking time, sprinkle the remaining cheese over the rösti.
  7. Tzatziki and of course a salad go very well with it.
  8. For non-vegetarians, the rösti is also sure to taste delicious with diced bacon or strips of ham in the mixture. Then you should be a little more careful with salting.

The Boss Kitchen editorial staff oversees content review, fact-checking, and recipe verification across the site. Published articles pass through the editorial team before going live, ensuring ingredient lists, techniques, cooking times, and nutritional claims hold up in a home kitchen. The team coordinates contributions across the site writers, handles reader corrections, and maintains consistency in measurement conventions, safety guidance, and dietary labeling.
