Ingredients

  • 1 bunch spring onion (s)
  • 750 g potato (s), small
  • 250 g meat loaf
  • 4 tablespoon oil
  • salt
  • Pepper White
  • some tomato (s), dried, pickled in oil
  • 0.5 teaspoon ½ thyme, dried
  • 1 ½ tablespoon butter or margarine
  • 4 egg (s)
  • some parsley, chopped

Instructions

  1. Wash the spring onions and cut into rings. Peel, wash and quarter the potatoes. Cut the meat loaf into cubes. Drain the sun-dried tomatoes and cut into strips.
  2. Heat the oil in a pan and sauté the spring onions while stirring. Add meat loaf and fry for 5 minutes. Remove and drain on paper towels.
  3. Now fry the potatoes in the frying fat for about 20 minutes, turning occasionally and seasoning with salt and pepper. Then mix the spring onions, meat loaf, dried tomatoes and thyme into the potatoes.
  4. Heat the butter in a second pan and fry 4 fried eggs in it.
  5. Spread the potato-meat loaf mixture on the plates and place 1 fried egg on each portion. Garnish with chopped parsley.
