Ingredients

  • 1 dash oil your choice
  • 3 small potatoes
  • 250 g mushrooms, brown
  • 1 bunch spring onion (s)
  • 1 handful coriander greens or parsley (large handful)
  • 1 teaspoon vegetable stock, grained, possibly homemade

Instructions

  1. Peel the potatoes and cut into small cubes. If necessary, clean the mushrooms and cut into similar sized pieces. Clean the spring onions and cut into rings, chop the herbs.
  2. Heat the oil in a pan and let the potato pieces lightly. Then add the spring onions and then the mushrooms. Stir again and again. Scatter grained stock and put a lid on for a few minutes if necessary. Wait until the potatoes are done. Finally sprinkle the herbs on top.
  3. For me this is a main course, as a side dish it might be enough for two.
  4. Note: A butter-flavored oil would be ideal, but it doesn`t have to be.
