How to make potato baskets with herring:
Directions
Grate the potatoes on a coarse grater and squeeze the starch out. Add the egg and finely grated cheese to it in a bowl. Season with salt and pepper to taste.
Line the potato dough in silicone muffin tins.
Bake in an oven preheated to 180 degrees for about 40-50 minutes, until browning.
Remove baskets from molds and refrigerate on a wooden surface.
While the baskets are cooling, prepare the filling ingredients.
Cut the onion into thin slices. Drizzle with a few drops of balsamic vinegar and add a pinch of sugar, then mash to remove the bitterness from the onion. Place the onion at the bottom of the baskets.
Peel the herring fillet from the bones and cut into small cubes, as for herring under a fur coat. Place the herring on top of the onion.
Add pickled cucumbers grated on a fine grater, hard and curd cheese, garlic passed through a press, mayonnaise to the boiled eggs cut into cubes. Stir until the egg cheese salad is smooth.
Put a spoonful of salad on top of the herring, decorate the baskets with fresh herbs.
Transfer the herring and potato baskets to a plate and serve.
These baskets can be prepared with a variety of fillings such as chicken, fried mushrooms or seafood. Beautiful presentation and pleasant taste – what else do you need for a successful meal?
