Ingredients

  • 500 g potato (s)
  • 250 g carrot (s)
  • 1 onion (s), finely chopped
  • 2 tablespoon olive oil
  • 1 liter vegetable stock
  • 100 ml sour cream
  • possibly chives
  • 2 tablespoon mustard, spicy
  • salt and pepper

Instructions

  1. Peel the potatoes and carrots and cut them into small cubes, heat the olive oil and brown the onions lightly brown, add the stock, add the vegetables and simmer until soft. Then puree halfway and season.
  2. Mix the sour cream with the mustard well.
  3. Put the soup on a plate and apply the mustard sour cream with a spoon in a circle, sprinkle with chives if necessary.
  4. A piece of farmhouse bread goes well with it.
