Potato Casserole with Zucchini and Cheese

This delicious potato casserole with zucchini and cheese is the perfect dinner for your family.

Servings: 2

Ingredients

  • Potatoes – 1 kg
  • Zucchini – 2 pcs.
  • Onions – 2-3 pcs.
  • Sour cream – 2 cups
  • Vegetable oil – 2 tbsp
  • Grated hard cheese – 1-2 tbsp
  • Salt to taste

Directions

  1. Peel the potatoes (if desired, I did not peel them), wash, cut into slices.
  2. Pour vegetable oil into a hot frying pan, pour potatoes. Fry the potatoes for about 15 minutes. Transfer the potatoes to a pot (or pots) for baking.
  3. Peel the zucchini, wash, cut into slices or circles.
  4. Fry the zucchini in hot oil for about 10 minutes. Transfer the courgettes to the potatoes in a pot (or pots) for baking.
  5. Peel the onion, cut it into cubes.
  6. Fry the onions in oil until golden brown.
  7. Place the onion on top in a ceramic baking dish (or pots).
  8. Salt sour cream. Pour vegetables with warm sour cream, stir if desired. Bake in the oven at 160 degrees for about half an hour. Sprinkle grated cheese on the casserole 5 minutes before cooking.
  9. Potato casserole with zucchini and cheese is ready.
