Cookies made from cheese and potato dough will become an original snack for a beer or white wine, as well as perfect for morning tea or coffee.
Ingredients
Potatoes – 350 g
Butter – 60 g
Wheat flour – 80 g
Semolina – 50 g
Hard cheese – 65 g
Provencal Herb Mix – 1 pinch
Salt – 1 pinch
Yolk – 1 pc.
Directions
We prepare the ingredients. It is better to choose a variety of potatoes that does not boil over.
Wash the potatoes, put them in a saucepan, fill them with water and boil until tender, about 20-25 minutes.
Drain the broth from the potatoes. Cool the potatoes, peel, and rub on a coarse grater. Put the grated potatoes in a deep bowl.
We also rub the cheese on a coarse grater.
Put grated cheese in a bowl with potatoes, add yolk, soft butter, Provencal herbs, and salt.
Then add the sifted flour and semolina.
Knead a soft dough.
We wrap the dough with cling film and send it to the refrigerator for 30 minutes.
After a while, turn on the oven to preheat to 180 degrees. We take out the dough and roll the sausage about 30 cm long.
Cut the sausage into 14 approximately equal parts.
On a well-floured worktop, roll each piece of dough into a cake.
We spread the cakes on a slide and put them on parchment.
Roll out the dough on parchment into a circle about 0.5 cm thick.
Cut the dough circle into 16 pieces.
Move the resulting cookie cutters slightly apart.
We transfer the parchment with cookie cutters to a baking sheet and put it in a preheated oven. We bake cookies from potato-cheese dough with Provencal herbs for 25-30 minutes.
Put the finished cookies on the wire rack. Let it cool.
Potato cookies with cheese and Provencal herbs are ready.
