Ingredients

  • 600 g pumpkin meat
  • 750 g potato (s)
  • 1 onion (s)
  • 50 g bacon, mixed
  • 1 chilli pepper (s)
  • 2 tablespoon oil (rapeseed oil)
  • 200 g whipped cream or soy cream
  • 100 ml milk
  • 50 g parmesan cheese
  • salt and pepper

Instructions

  1. Dice the pumpkin meat and peeled potatoes. Also cut the onions and bacon into cubes. Remove the kernels from the chilli pepper and chop the pods.
  2. Heat the rapeseed oil in a large pan and fry the bacon with the onions in it. Add the potatoes and pumpkin and season with salt and pepper. Fry for about 15 minutes over medium heat (the time depends on the size of the potato and pumpkin cubes. The potatoes in particular may take longer depending on their size). Add the chilli.
  3. Deglaze with cream and milk and simmer for another 5 minutes. Season to taste and sprinkle with grated parmesan. A fresh salad goes well with it. If you leave out the bacon, it`s also a wonderful vegetarian dish.
